There are websites dedicated to subsurface ocean temperatures. Complete with isotherm maps. Typically measured at 150m and 400m. Oceanographic vessels routinely tow instruments. A thermometer is an obvious thing to include. Temperature is also important when samples are taken. Along with other parameters like dissolved oxygen.

Bathyspheres are obsolete but they actually were used to observe undersea life ... ie fish. Submarines are typically looking for and hiding from other submarines and surface vessels and/or moving their missiles about in a strategic area. They're not primarily scientific platforms.
