Apparently, the idea that Joseph had the pyramids built as granaries is one that goes way back.

Fast-forward to the eighth century AD, to the time of the Irish monk Dicuil, a noted geographer who compiled succinct information on various environs, including Egypt, through numerous sources, both historical and contemporary. From a fellow monk by the name of Fidelis, who travelled the then ancient canal from the Nile to the Red Sea, Dicuil records the specious tale that the pyramids were “the granaries of St. Joseph”. The author Andrew Beattie, in his book Cairo: A Cultural History, remarks ”This erroneous notion that the pyramids were built to store grain was common currency for many years.” In fact the Jewish traveller and chronicler, Benjamin of Toledo, who journeyed around Egypt from AD 1171-1173, maintained the misguided opinion. It was not until the Age of Reason and into the consequent Age of Enlightenment that informed researchers dispelled the myth.

As usual, you misunderstand the facts of Carson's comments and to what it relates. Were you to take time to look rationally and calmly at the situation, you still wouldn't agree with him but you would understand his comment was not an insane supposition and that it was well within the realm of possibility.
