Potatoes have a lower glycemic index when boiled than baked.

We haven't eaten grains, potatoes........other than an occasional sweet potato..............or sugar for over 3 months. We're both going in for blood draws in Dec to compare with July blood draws where he was pre-diabetic and I was close.

Great substitute for wheat, corn, potatoes, grains. We have one every night with dinner.

Cheesy Biscuits

1 1/2 C almond flour
1/4 t iodized salt
1 T baking pwd (non-aluminum)
1/2 t garlic pwd
2 omega-3 eggs
1/3 C sour cream
4 T butter melted
1/3 C shredded cheese (of your choice)

Combine dry ingredients and shredded cheese. Use fork to break up lumps. Beat eggs, add sour cream and melted butter and beat some more. Add wet ingredients to dry ingredients and mix thoroughly. Add mixture to greased muffin tins. Bake at 400 degrees for 14 minutes.

Makes 12

You can mix it up and add other herbs or spices and any kind of cheese you want. Our favorites are Swiss and Parmesan.
