Sounds similar to what we used to do back when I was a youngster. 3 months before slaughter, they were put up in a stall and fed a predominately corn based meal. It not only fattened them up a little quicker, but it also gave the meat more marbling. We had Black Angus cattle, so the meat was exceptional after this procedure. My brother and I had to do all of this. It was one of our daily chores. Including cleaning out the stalls all the time. Made me want to go to University. lol.

whats the difference tween prime beef (which is very tender) $20 lb and angus 8 to 12 lb (tougher} at the local market

Good post. I eat and have always eaten a lot of beef. I just have two observations. (1) I can definitely taste the difference between grass vs grain fed. I much prefer the grain- fed taste. (2) Ever since I found the Costco meat department I have better steaks and chops than the prime steakhouses. (3) oh never mind..I had a Pelosi moment <g>
