One ER visit for those who don't die of COVID-19 (maybe 10-15% of those infected) will easily tap that $1200 and from articles I read before the pandemic - 60% or so of families have less than $500 saved and that article was from 2016. With insurance my youngest got a $500 copay for an infected blister on her foot.

Maybe you live amongst a cohort of gentlemen farmers. I doubt that how you describe things is going on in the nearest trailer park.
