It's a strange world out there -g- I had roast chicken over the weekend. Instead of throwing the carcass out I made a chicken soup out of it. Put in an onion, some peppers and sweet peppers that were about to go off, a big onion, and a load of garlic. Added mixed herbs and a tiny bit of salt. I wanted to put in fresh ginger too, but I was out. While it was boiling away I squeezed out some lemons and limes into a separate jar and added 15% cooking sherry. Now, I cannot drink alcohol, but 0.5% is OK, Not willing to ever go to 0.501% or above, so I measure carefully. 3 litres of soup and 100cc of 15% Sherry. Mixed in as the soup was cooling down and well stirred in. I picked the carcass clean of useful bits of chicken and put that in too. So this is OK for emergency use. I ladled into freezer bags, I have a spare small normally empty freezer and froze it all except for one bowl for immediate consumption. It's good. The small amount of Dutch courage in it will be necessary if the deadly Covids strike. The next batch will have fresh ginger in it. The chicken will be organic too. Sure they are more expensive, a lot more expensive, but if the bones are going to boiled for goodness, may as well get the right kind of chicken. The extra food pays the higher price imho.
