I slice my cherry tomatoes in half, dump them in a bowl with drained and sliced artichoke hearts I buy in a big, double jar at Costco, add a tablespoon of olive oil and some balsamic vinegar, some garlic and some garlic salt... and YUM! Sometimes sprinkle some grated parmesan cheese on it for variety. This week I bought some medium tofu that I may try pressing and adding to the mix for more filler and protein.

I get loads of fiber from the artichoke hearts and tomato skins... and plenty of vitamin C, etc. from the tomatoes.

Go to food network.com and look up Sungold tomato capanelle recipe.

Jan followed that recipe with the addition of white wine.

Capanelle is a type of pasta which Jan substituted with Linguini and spaghetti.

cut the tomatoes half.
