What is bitcoin "really doing" then? It can't easily be faked - it requires a whole lot of work to produce and record. What is the motivation to forge if forging takes more work and is more difficult than simply being paid to record the transactions?

This is a key point we should address: namely, what bitcoin "is doing" in the economy. Few people claim it is a currency. It can be stolen and it can be traced. What else it does is sort of like what a particular $100 bill does with a prostitute. It either buys her groceries or it does something else. Our problem is there is the Fed over there printing the shit out of them.
