they quote huge prices and take those willing to pay... ie price gouging which ads to inflation.

Why is maximizing your hourly sales rate "price gouging"? That's how markets are supposed to work. If some worker is able to regularly get $200/hour for work, others will enter the labor supply and push prices lower. The "price gouger" is entitled to get as much as possible before the new entrants push the rate lower.

Personally, I think surge pricing is great.
