Try cooking beef over cool wet Mesquite smoke, Pork over Hickory and Salmon over fruitwood. Incinerated meat is a product of the 10 minute feeding houses.

Perhaps surprisingly, we do have excellent beef here. Most is imported, but in Tuscany they raise a special sort of white cattle. Bistecca alla fiorentina is justly famous. The veal is of course also excellent. No trichinosis, either, so you can eat pork pink: much better that way.
