You are right, my knowledge about oils is lacking about interactions between linoleic acid and sunlight. I believe that your knowledge is lacking regarding recently understood interactions between excessive linoleic acid (omega-6) consumption and sunlight. It's not about what's worse, sunlight or seed oils; it's the combination that is deadly.

I had better read about it and think. I've always, with some gaps of years, consumed cod liver oil as I was given it as a child, and have never heard anything negative. And for a few decades I've thought of vegetable oils such as olive oil as okay too eat and maybe even good. I'm aware olive oil and avocado oil are different from grapeseed, canola, sunflower seed oils. But I don't know why.

I never agreed with the 1970s onwards anti fat diets. I didn't agree fats caused heart disease or cancer provided they were not heated over 120 or 140 degrees Celsius. Cracking, oxidation, polymerisation are what does the damage to organic molecules. Same as to oils in the oil industry. We went to much trouble and expense to protect oils against damage.

A niece who owned a takeaways shop used to fry things in fat. Then they switched to oils to provide healthy food. Then she switched back on learning oils were bad for health. She was a fan of Ray Peat, an internet health man.

For decades I have thought lecithin is great. I've bought it for decades and used it generously.
