I think you are showing your years of living in the Philippines bias.

Most/much of the central US won't touch a veggie or a fish!

My GF loves fish but is allergic and eats it very selectively. She won't touch raw fish.

It will be an industry to benefit from robots...

I used to get pretty decent fresh sushi at Sprouts once a week when they had it at half price and made it in the store. Now Safeway has $5 Sushi Fridays with several chefs making it there daily with the walk ins often willing to have a "healthy" plate for a $10 quick lunch... too much white rice for me, I prefer sashimi and then use the calories on tempura which is something that only tastes great very, very fresh.

It does sound interesting so thanks for the suggestion.
