Go to 7:14 on this 1,000,000 FPS video to see what happens to an egg when it is shot.

With the entry opening already made by the bullet, the bullet creates high pressurization within the egg, before the bullet exits.

The contents of the egg are first blown out of the entry opening by that pressure, then blown out the exit opening later, after the bullet opens that up.

The first pieces of shell, egg yolk and egg white exit the egg toward the direction the shot was fired from.
