Tom is out in search of some sun and warmth. He should be back online next week. His laptop is in the shop so he's getting a real vacation this time.

Hi Bruce,

Actually I was off checking up on the sugar cane harvest in the West Indies to assure that there was going to be enough Rum to keep my brain pickled!! The pickling process continues at an excellent pace!!

Seven days in heaven! Stayed at the Royal St. Lucian. Best dinner out was at the "Mortar and Pestle", Rodney Bay. Best local meal was at the Marqui Plantation and was created by local chef "Rose" from veggies with names I'd never heard before. Chicken was cooked in coconut oil and brown sugar with small onions, sweet peppers, a potato-like plant, and a host of other fresh greens. Side dishes were fried Plantains, creole rice, orange and white yams, sweet chutney relishes and several other great things with names unknown!

Watching Rose prepare it over home made pottery charcoal braisers was a treat in itself. Bought a cookbook before I came home!!
