It is difficult to draw too many conclusions from so little information. We know Paul says it was Eve who was deceived, not Adam so I concluded Adam ate the fruit from the tree of the knowledge of good and evil knowing the consequences. As to what he was thinking, I don't know. He had two choices, don't eat and lose Eve, eat and be disobedient to God. We know what he chose, but not why.
As for the transfer of dominion over the earth, we know it was Adam's and it transferred to the devil. I assume that was the devil's motivation in the first place, to get that dominion & authority from Adam. Why that transfer took place as the result of those events? I know it did take place but not exactly why. I know Jesus took that dominion and authority from the devil and has it now and we enjoy that authority in Jesus's name. What have you learned about these things? I'd like to hear it.
