Today's Recipe
a Greek Salad for Purists

The Dressing
Use cold pressed olive oil and white vinegar.
A small amount of Balsamic or wine vinegar may be added also.
Add a generous portion of chopped fresh oregano.
Shake until emulsified, chill


The Salad
A cucumber, peel quarter lengthwise, remove pulp and cover with salt, this draws out the bitter cucumber juice, it takes about 20 minutes. When the juice is out, wash and cut into bite size pieces.
A red onion, remove outer layer and cut into slices about 1/2 " thick. Break the slices into rings and slice into bite size pieces (large).
A green or red pepper, fancies may also be used. Core and cut into bite size pieces.
A good size piece of Feta Cheese (1/2 lb) should be broken by hand into large pieces, do not slice.
4 or 5 Roma tomatoes, quarter and remove the pulp leaving only the flesh of the tomato. Cut into bite size pieces.
Black Olives are de rigeur, so even if you don't like them, put them in anyways and pick them out of your individual serving. I use the Giant Black ones with no pits.


Add the dressing just prior to serving. Bread or crusty rolls makes it easy to get all the dressing off of your plate.
