Hahahahahahahahah, as if they have a choice. They don't think- "oooh, it is either waitressing or investment banking- you know I think I would rather be a waitress." They merely get stuck in a dead end job with bills to pay. And like everyone is good looking enough to move on to work in a dinner house. Right. Well I got news for you buddy boy, unless you look good in low cut dresses and ruffled panties, you couldn't work at some of the dinner houses I worked in. They didn't exactly hire middle age ladies even if they did really need to pay a mortgage. And your one experience makes you think you know the food business? I worked in over 10 restaurants as a waitress, cocktail waitress, cook, busboy, and hostess, from the time I was 14. Some of the people I worked with 20 years ago at a local pie and burger shop are still there. The ladies who work at our local Lyon's restaurant have been the same group of middle aged women since we moved here 6 years ago. So I have no idea what you based your statement "most of them move on to larger and better establishments". On your one little coffee shop in Vermont? You rarely see a fine restaurant waitress over 30, but in my experience a lot of the ladies who work at Denny's (all the way up the coast of California and Oregon) are well over 30.
