Well, I gave fair warning....

Pasta with Spinach and tomato

1/2 cup slivered almonds(optional)
2 cloves garlic(but I use more)
1/4 cup pure virgin olive oil
4 cups fresh torn spinach(also in abundance all summer)
8 oz. penni pasta(cooked)
3 cups chopped tomatoes
1/2 cup green onions(a garden favorite though my sweets rarely get as big as baseballs(I live on the south shore of Lake Erie), but the keepers do, and will work also)
8oz. feta cheese

Cook and stir nuts, garlic and onions in 2 tbs. oil on med heat for 3ish minutes, add tomatoes, spinach(and what ever else is handy-option) for 2 minutes longer. Pour mixture over cooked pasta. Add cheese and rest of the oil-toss and serve.......

And it goes well with Cabernet Sauvignon (I'm partial to California's- I can't speak french)

That's it.....Quick and simple......
