Best antidote I've found to chili burn in the mouth is plain steamed rice. Picked it up in Thailand, where they eat some pretty hot food. They have some strange delayed-reaction soups... first few spoonfuls all you taste is lemon grass. Halfway down the bowl you realize that everything from your backside to the tips of your hair is on fire. That's when the rice comes in useful.

There's an Indian salad, cucumbers in yogurt with ground toasted cumin, that's a pretty good cooler too. Guess everyone who does the heat finds some way to cool it off. Equal and opposite reactions, or something like that.
