I don't shred the cucumbers for a Raita. There's a Turkish variant called Cacik, also excellent, where I do seed and shred them. Personal preference, I guess. The Cacik uses shredded garlic with the mint and lemon juice; no cumin. Good stuff. One key for a Raita is to never, ever, use pre-ground cumin. Got to get the whole seeds, toast 'em until they crackle, and grind them manually. Totally different taste.

We make yogurt from buffalo milk, unprocessed, straight from the faucet. Rich stuff. I like to let it go a little sour and use it to bake bread with; gives a good imitation sourdough.

Makes me hungry thinking about it.
