Another of my favorite smells and jars is the fresh cardamom. Cardamom lemon soda bread. My my my.

Paradise in a bottle.

One can easily imagine why the spice trade was so dear and exciting.

Jeez, this raita stuff is super exciting. (Did someone cough?) It's just, well, how often do raita raters get together. ("Plenty.") I don't think I've ever met another raita.....enthusiast.

We make one I'm sure you're friends with:

You start with some butter (or ghee, 'course), melted in a pan;

mortar-crush (lightly) some cumin, cardamom, coriander, cayenne,

add them to the butter,
stir in two mashed bananas,
remove the pan,
stir in two cups of Nancy's yogurt or "Buffalo yogurt".

Chill.

Serve with any appropriate hot thingy. We do this one with cauliflower curry most. yum.
