What do you do with the paste once you have it?

Pour over the noodles?

After the garlic is in the water, do you discard the garlic or mix it in the batter

Don: Do you do any Thai cooking? It's my favorite cuisine and I try to make it at home all the time, but it never tastes exactly like the restaurants. Particularly the panang curry and the red Thai sauce which I could eat every day of my life. Also, I've noticed that the tofu which I get at Whole Foods is never as firm as the stuff I get in restaurants. Where did you get yours, if you even ate the stuff <ggg>

and you know what...i wrote down OYSTER hot sauce....and the oyster stuff was on the top shelf mixed in with other oriental stuff...so I stepped up on one of the shelves ..hanging on for dear life...rooting through the bottles for OYSTER hot sauce...and mumbling like a bag lady....cussing out you AND your OYSTER hot sauce...then I come back and just noticed it was ORIENTAL hot sauce....
