I got to meet Leo Kottke north of Dallas once. No one could play a 12 string like him...and he made it look easy. Emphasis on the 'look', though. I am surprised that we are into the list this far and no one has mentioned Eric Burdon and the Animals(House of the Rising Sun) or Tommy James and the Shondells(Crimson and Clover OR Crystal Blue Persuasion).
Did no one do any Leon Russel? Black Oak Arkansas? Foghat? Johnny Winter(I still listen to his 'Still Alive and Well' album)? Not great bands but a lot of fun.
