I downloaded the demo version of MusicMatch a month ago. I haven't used it in a while, but recall that it took at least one or two minutes to digitize a 3 1/2 minute selection from a CD. So it can record faster than the CD plays, but it isn't terribly fast.

To answer your original question, it takes about 20 seconds to copy a 4 MB song file in (.mp3 format) from my C: drive to my CF drive via the parallel port connection to ImageMate. That is about 250 KB per second. I have an Intel Pentium processor which operates at 200 MHz. Strangely, it only takes 2 seconds or less to fully format a 15 MB CF card, an operation that usually requires 2 minutes or so for a floppy disc. I found that quite strange.
