Recipe for Squid

Poor Man's Scampi

Marinate squid/calimari with thickly sliced elephant garlic in a mixture of fresh lemon juice, olive oil, and dry vermouth. Quickly grill the marinated squid/calimari and garlic in a very hot saucepan until golden brown. Pour remainder of marinade over grilled squid/calimari, allow to boil for a minute, reduce heat, and poach for a minute or two. Serve.

Funny thing about squid. If you don't cook it long enough or if you cook it too long, it will be very tough and chewy. Cooking times and temperatures are crucial to achieving desired taste and texture.
