Out West here, these are issues worth fighting for.
One way to work through your frustration is to buy legacy organic vegetables (grown from non-hybrid seed stock). They are available in the major health food stores. There is also a campaign where you can order some of the seeds, grow them, and send some back to mix naturally with the rest of the stock genes.

The commercial farmers support the uniform shape and size of the seed company product (both in seed and final fruit) because it lends itself to mechanization. This includes the smaller farms of a few hundred acres.
