X, about that small wheel of brie--I am not a very proficient broiler. Something about the split-second timing between delicious and burned. However, the brie recipe sounds so good I'd like to try it. So my questions are--do you start with cold or room temperature brie, how far is the broiler pan from the flame, and about how long does it take to reach the melty wonderful stage?
