Those aren't ellipses; they are merely pauses. In speech, I suspect, she fills in any moment of potential silence with some equivalent of "ah" or "um" or "like"--am I onto something?

to figuratively prevent you from interrupting her stream of consciousness form
of delivery, which in real time is quite continuous and one interjects at his own risk.

To still oppose split infinitives may be a lost cause, but according to my dictionary, interject is still a transitive verb.
