In my experience of managing country clubs, resorts and restaurants for 15 years the average spent on outside baked goods was on the order of $100 to $200 per week, if that much. In most cases it's less expensive to bake on site where sales are good. The speciality cakes have a good niche market but the volume per customer is very low. My guess is the bakery currently does $600k gross per year not 6M!! You are right, the mark-up is great but most folks still buy bread, coffee and cookies at the grocery store.
