wily,

Definitely, Appian was the first multi-mon card I looked at, and the first I ever delt with (an install into an NT bOX as a favor / job for an individual). I eventually chose the Matrox due mainly to price. At the time of my purchase the Appian 4-port was pushing $900 (I think I remember it being at the time) and didn't seem to offer any advantages . Also Matrox's rep with drivers, and chipsets that put out sharp & clear text / images played a factor. I think Appian has recently upped their offering to the 8meg / port, I don't remember them having that when I bought.

I will tell you wily, my next generation of multi-mon cards will probably be Matrox based on (I hope) the G200 chip or the Colorgraphics based on the S3 Savage3D (wheras the permidia2 of the Appians is I belive getting pretty dated,(as is the G-100 of the Matrox) The STB's are running on ? Riva 128's? which is not bad for a multi-mon card but the STB's were the most expensive).
With type / amount of RAM, software options being similar I move onto reviews of the particular chipset, RAM DAC speed, supported resolutions etc. and the Matrox seems cost effective.

The features you mention are all in the Matrox software as well (except hot-key switching) and I get the impression pretty standard on the Big Four (Appian, STB, Matrox, Colorgraphics).

You are definitely right on the higher memory though, as ZP's story attests to, and the desire to use the AGP slot which Matrox currently doesn't offer.
