I'm pretty sure the only meat in burgoo is mutton. Barbecue mutton. Least that's how we made it in Western KY. <g> If you're ever down Owensboro way- they have the best barbecue mutton in the world. I get some about every time I visit my mom. Moonlite BBQ is world famous- People come to W. KY just to eat at that place.
