The preventive solution to the problem of Listeria contamination exists already. It's called Chlorine Dioxide. Sara Lee, Oscar Mayer Foods, B.B. Meat & Sausage and Ba Le Meat Processing & Wholesale would save their reputation and lots of money in recalls and advertising if they were using Chlorine Dioxide to wipe out bugs that settle on food. It cost Sara Lee alone US$76 Million to pull 30 million pounds of meat from supermarkets and to shut down production. How much money will they loose in sales and how much money will they spend in advertising to save brand names? How about lawsuits by consumers? The same companies and the American Meat Institute should put pressure on the FDA to fastrack the approval of Chlorine Dioxide for meat since it has already been approved for sanitizing peeled or cut produce that would later be frozen and for cleaning whole fruits. The FDA said earlier this year that it will give top priority to petitions for new food additives that could improve food safety (WSJ-Jan6/99).
