*OT* Cooking Lesson # 162. Italian sausage.

Recently while taking my boy to the fair, I got to indulge myself in some of the best Italian Sausage i ever ete. Well you folks know how I am, I started pestering the small merchant with a barrage of questions. He finally came across and told me who made the mix and where to get it. I made a note and stuffed it in my wallet until I was in the right place at the right time. Well I finally got about 30 lbs from the source.

I cooked some that night & then the next and again and again, but it just didn't have the flavor that I remembered from the fair. So tonight I gave it another whirl and I pulled up that Video recorder in mine mind and I realized what the merchant was doing that I didn't...

He cut the ends off & made other small slits in the skin to allow the flavor of the onions & bell peppers to enter the sausage. Man what a difference in the flavor.
