Hmm - I just made beef stew last week.

OK -- BEEF STEW

1-2 pounds stew meat (prime is best)
Chopped onion
A couple of potatoes cut up
Big can of tomatoes, drained
Throw in some small carrots
Why not a couple of garlic cloves

Dump this in a crock pot with various seasonings. I like parsley, salt, pepper, Worchestershire sauce, Louisiana Hot Sauce, red wine, a little oregano.

Cook on high an hour or so, reduce heat. Cook for a long time.

Carolyn's Chili

3 pounds ground chuck or sirloin
2 cut up onions
Salt
Pepper
Garlic Powder
Chili Powder

Brown beef, then drain off fat. Dump all of the above into a crock pot, along with some water. I add about 2-3 coffee cups of water, and about 5 regular tablespoons of chili powder. I prefer ChiliQuik, but I don't know if you can find that anymore.

Cook all day. About an hour before you eat, open about 4 cans of Red Beans, drained and rinsed.

I serve with vinegar and raw onions. Obviously this is a family dinner. LOL
