That's a yummy looking recipe. Thanks for posting it. I will try it. Of course, I will substitute Chinese eggplant and save the hassle of baking and peeling. Throw it all in a pot, I say.

Regarding covering it, I wouldn't.

Yes! That particular eggplant recipe really looks intriguing. My daughter hates eggplant, so I have to wait until she leaves before I make it. Let me know how it is?

And speaking of the Sunday Times, did you read the article in the Magazine about Dave Pelzer, professional abuse survivor? It was fascinating.

Never use ground cumin. Roast the whole seeds (shake them in a dry skillet until they pop and smell wonderful) and grind them yourself. Totally different taste.
