There has been a huge influx of immigration to Southern Illinois over the last 15 years. A lot has changed about the local culture. I heard, for example, that they allow the "grits casserole" as a substitute for the Kentucky Coal Miner's daughter. Note: Its expected of course that she include some jalapenos as evidence of her willingness to assimilate.
