Yes, I've read that the farm raised salmon is as fat as junk food. I don't trust them to tell the truth about what's wild salmon, but I do buy it anyway. I like fresh tuna a lot, but it's on that list of fish you aren't supposed to eat too much of. The best fish I've ever had was shad. It was made by that woman I told you the fax-nightmare story about. eeeek. I'll never have THAT again. I was reminded about it when I read a whole piece in an old NYer about shad. It was by John McPhee. Who is very good. Oh, good, do make that, and report in. Tell us what you serve it with. For just you and Bill, it could be a meal by itself, with just a nice tomato salad. Wine. A giant chocolate cake. I take it back about the cake! My evil twin seized the keyboard for a minute!
