tried a similar recipe (for fajiitas) but it used Limes instead of lemons. Actually tried lemons (I have lots of lemon trees). Liked the limes slightly better.

The onion part doesn't bother me, but isn't that just a tad bit more lemon juice than necessary? I like lemon, but not a lot.

Onion Pie

4 Walla Walla Sweet onions.......or what ever sweet onion is in season........thinly sliced.
3/4 cup cream
1 cup swiss cheese grated
Salt and Pepper
Paprika

Crust:

3/4 cup crushed saltines
3/4 cup crushed ritz crackers
1/3 cup melted butter

Preheat oven to 350

Mix crackers and butter together and pat into 9" pie pan over bottom and up the sides.

Saute Onions, salt and pepper until onions are just glazed. Place in bowl and add cream and grated swiss cheese. Mix together. Place onion mixture in cracker lined pie pan and sprinkle with paprika.

Bake 30-40 minutes until firm.

Delicious!

PS watch pie carefully to make sure edges don't burn

That must be the answer because we tried it tonight and we thought the chicken was a little tough and not that much flavor. I am sure it is that other seasoning which helped the dish along. We are going to use the leftovers in chicken salad sandwiches - without the onions. They will go into a focaccia.

(Interestingly, the spell check here objects to focaccia even though that is the way it is spelled in the dictionary???)
