Yes, organic cream cheese when I can find it...

Agave metabolizes very slowly in the body so it doesn't spike the blood sugar level... how much "sugar" it contains is meaningless, it's how it's metabolized in the body... it's lower down on the glycemic index than an apple... and don't get distracted with calories, calories don't mean anything... 1000 calories of protein and vegetable is not the same as 1000 calories of bread or pasta...

How many people the cake serves depends on the size of the slice, I really have no idea, it lasts me about a week or so... I never pay attention to calories... my family doctor recommends agave to his diabetic patients... I used to be diabetic and took lots of meds for it, now I'm not diabetic and I take no meds... so, anyone who tells me agave isn't healthy doesn't know what he's talking about...

Eat the fruit itself, don't make fruit drinks... making fruit drinks from the fruit turns the fructose into sugar when you process it that way... it's always better to eat the fruit as it is without tampering with it...
