actually, i consider the bulb the real prize.

raw with parmigiano-reggiano and chilled marsala,
goat cheese and olives, a salad with orange slices,
with cream cheese and figs for dessert...
braised, sauteed with pernod for a fennel confit for pizza...
or simply as an accompaniment (always with salmon)?

If someone approaches you with a once-in-a-lifetime deal to invest in ostriches, in any form, do yourself a favor and politely turn the offeree away. Ostrich investments have been something of a boondoggle here in Northern California. Trouble is, it seems a can't miss moneymaker. That it's turned into such a loser is a mystery to many of us.

Ostrich eggs are indeed spectacular. Two ostrich eggs can be turned into a sumptous omelette of a proportion approaching that which could satiate the entire population of an Italian orphanage.

The erotic possibilities of asparagus? How do YOU eat it? You must do so in a more sensual way than I do. Dealing with all of the inherent risks of melted butter and the stringy nature of the wider part of the stalk is about all I can concentrate on at one time. I suppose it has the right shape and everything, but not very robust . . .

I think there is some aversion to ostrich meat, even among nonvegetarians. There are ostrich booths at the produce markets here, and it does not seem to be a big seller. A very good IDEA, but somehow in practice I don't think most people ever have the urge to jump in the car late at night and go buy some, unlike the primal cravings for cheeseburgers and fries that well up involuntarily in most red-blooded Americans from time to time.

I will ask Jane if she has any recipes to share. I hope she responds.
